‘I grew up with the tradition of eating little snacks with drinks and the more I travelled the more I loved discovering these wonderful tasting plates in every country: fresh Sushi in Tokyo’s fish markets, garlicky chimichurri in Nicaragua, hearts of palm freshly cut in coastal Kenya Viajante bar is my chance to showcase the finest of these in new and, I hope, irresistible combinations.’
